We're often asked whether marbled crayfish are fit for human consumption. Here's our take.

This species is considerably smaller than the "mudbugs" associated with Louisiana cuisine.

We've read rumors that the Chinese government has marbled crayfish in mass production as a food source, though it's genuinely difficult to verify much of anything happening there.

In the USA, the FDA hasn't given them any kind of approval, mainly because it's a newly recognized species and government review moves slowly with anything new.
